Under 'Active Directory Sites and Services' [ Default-First-Site-Name -->
Servers ], we have some irrelevant servers listed which was removed
abnormally lately. We want to delete those entries. If anyone can advise, it
would be great.

Domain controllers will be listed in AD sites and services even after demoting.
You have to delete them manual. If the DC was NOT demoted with dcpromo you
have also to cleanup the AD database according to:

With server 2008 it was implemented first that you can use AD UC and AD sites
and services to delete a DC and trigger automatically the AD database cleanup.
This doesn't prevent you, when running it in AD UC, to delete the DC in AD
sites and services and also to clenaup DNS if the server was DNS server.
in addition - the fsmo-roles are transferred automatically if the dc for
deletion holds 'em...

I would agree to manually transfer teh roles prior to a demotion, especially
if there are more than 3 DCs in the domain. If there are only two DCs, the
demotion process should normally transfer roles to the other DC, however,
it's best to manually transfer them so if there are any problems in the
process, it can be identified and addressed prior to a demotion.

my posting was only intended to show a new gui, when deleting a dc concerning
the fsmo-roles...
Of course - there will normally ever the need to do this manually...
