Is there a key to press that will allow me to close ALL message threads up
at once?

Not a key that I'm aware off. But you can change the setting in Tools,
Options, Read, Automatically Expand grouped messages

I want the opposite, I think. I want to close all messages and sub messages
all at once.

Toggling Expand group messages off results in just the first thread in each message being present and based on your 'View'
settings(Show all, Hide Read, etc)a

Are you asking how to make the entire message and preview pane to be void of any messages and threads ?

I want all the message there, I just want all the triangles white and
pointing to the right (closed). Like maybe there is a key like ctrl or shift
or alt or something else that, while held down, would cause all siblings and
parent to close while closing the OP triangle.

Try Ctrl-h twice? (assuming you have unchecked
Automatically expand grouped messages
otherwise Alt-T,O Ctrl-Tab,x )
