I have recently upgraded to Microsoft Office 2007 and now find that the
email spell check in Explorer 6 is in French only. When I try to change it,
it does not give me any options. I require English (Australia). My French
was never very good anyway!!!

OE never had its own spell checker, but used that from other programs. You
can try searching for 3rd party spell check programs for OE (they exist but
I don't know them).
