Is it necessary to shutdown the guests in order to patch the host? I read an
article saying this step was necessary. Thanks

Not strictly required, but if you don't, the chances are greater that you'll
have to reboot before your patch will be fully applied.

Your best bet is to set up a two-node Hyper-V cluster and move all of
your VMs to one-node, patch the server, then move them back and patch
the other server. You will eventually need to do a patch that
requires a reboot...so you may as welll plan for that in your
deployment, plus it gives you the redundancy you need in case you have
a hardware failure.
