I used Goya yellow rice and omitted the Adobe seasoning bc I didnt have any. It was very good! Definitely will add to my rotation. To make it easier I even used the Tyson diced chicken that was precooked and just heated up and cooked with the rice. Also used stainless steel pot but I did plug the holes with a paper towel. Thanks for the recipe!!

Pasta salads are incredibly delicious with such minimal efforts. This spaghetti salad is not the exception and pairs so good with many other recipes. In fact, pasta salads are often the perfect accompaniment for many Mexican dishes. I specifically like the combination with my oregano chicken recipe, a classic from Oaxaca, Mexico. This recipe does not disappoint!


This recipe is delicious. Every time I make anything Mexican now, my kids ask if I am making this rice with it. The chicken in this recipe is delicious as well. I have made this several times. I always keep the ingredients on hand for the rice.


Made this tonight. Pollo loco is one of my favorite Mexican dishes. Absolutely loved it!!!! I added cilantro and put it on a tortilla. I also sliced up an avocado and lime. Great recipe. Thanks for sharing.


Love this recipe! Sometimes I make the rice as a side dish to other Mexican entrees. I adapted the rice recipe for the Instant Pot by reducing liquids to 1 cup chicken broth and 1/4 cup tomato sauce/puree, to satisfy the rule of thumb liquid to rice ratio of 1:1. Sauteed the rice and seasoning just like the recipe states, then cook manual (high pressure) for 3 minutes and natural pressure release (at least 15 minutes, i let mine go closer to 30 because i was doing something else). Worked like a charm and didn't have to watch the pot!! Thanks for a great recipe!!

I love this El Pollo Loco chicken recipe because I can use it in a variety of Mexican dishes throughout the week calling for shredded chicken and it gives it a nice flavor that is different from shredded rotisserie chicken in a recipe. For any of the recipes below, instead of making the chicken like the recipe asks, just substitute shredded El Pollo Loco chicken!

Probably one of my favorite options here at El Pollo Loco. Without ordering any meals, you can simply get meat to eat immediately or take it home for later. You can choose from the fire-grilled chicken breast, fire-grilled chicken thighs, fire-grilled chicken wing or leg.


El Pollo Loco, or "The Crazy Chicken," has been growing like mad since it crossed over the border into the United States from Mexico. Francisco Ochoa unknowingly started a food phenomenon internacional in 1975 when he took a family recipe for chicken marinade and opened a small roadside restaurante in Gusave, Mexico. The sauce recipe is actually just a kicked-up ranch dressing that includes a small amount of buttermilk in the ingredients list. But if you don't want to buy a whole carton of buttermilk to use just a tablespoon for this recipe, that's okay. Substitute the regular moo juice you've got sitting in the fridge.


This creamy green sauce is available at the salsa bar at each of the 389 El Pollo Loco outlets located throughout the western United States, and folks are going crazy over it. The problem is, you can only get it in small quantities at the restaurant, and once you taste a little there you're going to want a lot more of it at home. Use a food processor to mix this one up (everything but the cilantro and onion goes in there) and prepare for a delicious, spicy concoction that you can pour over your favorite homemade Mexican-style dishes, from taco salads to fajitas. Big props go out to Pancho Ochoa, who opened his first roadside chicken stand in Guasave, Mexico in 1975. Today Pancho's El Pollo Loco is the number one quick-service, flame-broiled chicken chain in America.

The delicious sweet-and-spicy secret sauce is what makes this dish one of P. F. Chang's top picks. Once the sauce is finished, all you have to do is sauté your chicken and combine. You'll want to cook up some white or brown rice, like at the restaurant. If you can't find straight chili sauce for my P.F. Chang's spicy chicken recipe, the more common chili sauce with garlic in it will work just as well.
