Check out chapter 15 in the online or printed manuals -- it's the ways to
backup/alter etc. an SMS site installation. even the SMS database has
references to the installed domain...
I hope I misinterpreted your question, and someone gives you a different
answer.

The answer is re-install is you want to change the domain name.
