I can see where using subwebs for administrative / security purposes, or
assigning a different subweb to each department in a company, would be
beneficial. But take a small insurance or law firm, as an example, the only
reason for creating a subweb, that I can see, is possible for creating a
training / practice site for those who might be trained to administer the
product.
Anyhow, I'm just learning and want to ask the questions up front. Also, is
there a web site that discusses or demonstrates the hows and whys of using
subwebs with STS?

The main reason why I would use sub-webs is for different access rights for
each sub-web or for splitting up the site among departments. I use virtual
servers for completely different sites.
The main problem with subwebs is that you need to create the link to them
yourself in the top level default.htm whereas if you use document libraries
to split up your site they would be added to the Quick Launch list
automatically.
In the cases where I use subwebs this is NOT a major disadvantage.
I don't know of any papers discussing this.

I this case I really would think about rolling out a STS solution.
STS is about sharing Information with others, not about hiding it ;-)
