No, there is no way to archive only an individual task. The best you can do
is to archive a project. Since you are using Project Server 2003, long ago
we developed an archiving "process" documented in the following FAQ:

The above process will keep the archived project in the Project Server
database, but will "hide" it from view from most users. If you want to
physically remove the project from the Project Server database and move it
to a new database, you could also purchase a 3rd party tool at the following

Please note that I have not used the above-referenced Phyiscal Archive Tool
personally, though I know one of the developers who created it. Hope this
