I can't seem to find a turn-page transition effect in powerpoint 2007. Is
there one available - has anyone used one?

You probably need an addin for this. PowerPlugs: Transitions IV contains
turning page of book effect which you might want to try it out:

Alternately, here's a tutorial that talks about creating 3D transition:

you could try out the 3D Issue Printer. Its is a printer driver that allows you to create flipping books from any windows application that has a File / Print option. So you should be able to generate from powerpoint.
