You can emulate an Out of Office Assistant by creating a Template and using
the Reply to Rule, this knowledgebase article explains the procedure:

Note: Article indicates Outlook 98 in internet only mode, but it will work
for Corporate / Workgroup mode as well as Outlook 2000.
