Appointments shown in Outlook Today

Yes and No!
In Outlook as it's delivered, No.
However, Outlook Today is coded in HTML. If you really want to get into it,
you can make Outlook Today display whatever you can access in HTML. For
detailed information about customizing Outlook Today, look in Chapter 4 of
the Microsoft Outlook 98 Deployment Kit.

I don't think you can choose the number of Tasks. Only Today's tasks or all
Tasks.

No, OL2K is only offers 7 days of Appointments, the same as OL98.
