HOW do I SELECT a stationery for an email I want to send?

I want to send (new/reply) email.

I have selected that I want to send the email in HTML format, and now wish
to choose a "stationery" from those available in Outlook (in OfficeXP).

BUT HOW ???????????

The stationery pull down in top right of Outlook window just links to the
help system, and I can't see anywhere on any pull down menu or icon anything
to do with stationery selection.

PLEASE NOTE: I do *NOT* want to use a "Default Stationery"!

All the help text I see relates to using a default stationery, but I don't
normally want to use any stationery at all. It's only occasionally that I
want stationery, but how???
