One of my users had a meeting scheduled on his Calendar.
When he looked at it this morning, the meeting was removed
and he could not find any evidence of this in his deleted
items as if he deleted it by accident. I am running an
Exchange 5.5 server, soon to be an Exchange 2003 server,
and I am wondering if there might be an event log
somewhere that I can reference or if there is something in
Exchange that I can turn on to provide me with some sort
of log file.

No, Outlook maintains no log of items being added, deleted or changes. Try
using the Advanced Find dialog to search all calendar folders.
