How can I edit the subject line in an incoming email?

After receiving an email, I sometimes like to change what is typed in the
subject line. I used to have it setup in Outlook 2003. I have just started
using 2007, and I can't seem to find that function.

Other Actions > Edit message.

For some reason, the subject doesn't change to a text box so it doesn't look
editable, but you can click and make changes.

It is a lot easier if you open the email place the cursor in the subject
line and change it to whatever then do a file >save
