Is there a way for me to send an email to many users (600 people) and have
them click on a "link" to add the meeting to their calendar w/time,date
details, but not actually create a 'meeting' invitation so I don't have to
get a bunch of replies/accepts/declines etc.

You can make a appointment, save it as an ics file, put it on a web server
and send the link to it.
