If I send to multiple recipents using BCC to protect address privacy how can
I as sender then check back who I sent the mail to - if I open the sent items
folder the address boxes are blank.

I may wish to send the same message to additional people so it is important
to be able to check this out.

Open the email and you should see the addresses in the BCC field.
You can also add that field to the Sent Items view but might need to hide
the Reading or Preview Pane or move the field to see it.

When I open the email it displays "none" in the information about who it is
sent to.
This is my difficulty - how do I get to that information

does the BCC field display it if you add it to the view?
I'd need to check no display in the open item is an issue.

Keep on mind that BCC does not present recipients, doing so would defeat
it's purpose, when viewing mail - Try the following: Open "sent items"
folder>right click message>properties>details tab - check if BCC listed.
