I am using a Vcard to display our company name, address, phone number, email
and such but at the bottom of the email it is showing a lot of information
such as below..

Begin:VCARD
Version:2.1
N:Faulkner:Sandra & Mike
Tel:Home:Voice:
It just continues and with all of this instead of just showing the name,
address and such. How do I change this to only show their name, address,
phone, etc?

Edit the vCard in Notepad and remove what you don't want. You should retain
the vCard begin and end and version lines, those are required by the RFC for
vCards.
