Tools-Options-Mail Format-Signatures.
Not that hard, really.
While the other posts mention how to change the signature recorded when
Outlook is the e-mail composer, perhaps you are using Word. If so, ask in a
Word newsgroup on how to setup and modify signatures in that program.

I apologize for laying this one you. I tried to start a new thread by
clicking on NEW and then Question--but saw no panel in which to actually
write the post. I find the overall opacity of Microsoft tremendously
frustrating.
Bri's advice is correct but sometimes the steps differ slightly between
versions.
Tools > Options > Mail format. Click on the Signature Picker button.
Highlight the signature you wish to change. Click the Edit button. The Edit
Signature window will open. Highlight the signature and click on Font to
alter the size. Click OK. Then click OK on the Signature Picker. Then click
OK on the Options window.
Open a new email to see the edited signature.
