I've tried copying from Windows Explorer but it does not give me an option
to save as a different file type.

Easy answer - install Thunderbird, (get it here:
http://www.mozilla.com/en-US/thunderbird/
Then import your Outlook email into Thunderbird. Thunderbird uses the MBox
format mail folders. Just copy the resultant mail folders WITHOUT the
extension onto your Mac.

Open Thunderbird - do Tools- Account Settings. Click on Local Folders and
that will tell you where the mail files are located.
