I want to type a third party's e-mail address into an e-mail message to
someone else and turn it into a hyperlink, so the e-mail recipient can just
click on it to address an e-mail to the third party.

just make sure that when u compose email under the tab Tools>Autocorrect
options>Autoformat as you type .There is check box with the option that
says"Internet and networkpath with hyperlink" if this option is checked when
u type any email address that will become hyperlink and the person who
receive it if open in outlook will get the compose screen.
