I currently use outlook to pop my email. We don't have an exchange server
and I need to access a coworkers email while she is on vacation. How can I
get her email set up so I can read it in my Outlook.

Do you want to leave the mail items on the server so that she can get them
when she gets back?

You can setup her account in the Tools menu > Accounts dialog and set the
"Leave Mail on Server" option if you need to...
