I receive 2 types of Outlook emails. One is business and the date format is
the way I want it, ie day/month/year, but the other shows as month/day/year.
I would prefer that both be in the first format.

Right-click in the column header row, select Format Columns, pick a
date column, use the drop-down listbox to select a format. I see a
mm/dd/yyyy format but I don't see a dd/mm/yyy format listed. Guess
you have to change your regional date settings (under Control Panel).
You can edit the short date format spec so enter "dd/MM/yyyy".
Previously the short date format for me was "d/MM/yy" so that's what I
saw in Outlook. Then I changed it to "dd/MM/yyyy" and I saw "8" for
month change to "08" and "07" for year change to "2007" in Outlook
after clicking apply (I still had Outlook open when I applied the
change for date format so I saw an immediate change in the Received
column in Outlook).
