I would like to know if there is a way that i can track when the 'out of
office assistant' has been switched on and off. Is there a way of viewing a
log of this?

There is no such log. What are you trying to achieve and with which version
of Outlook?

I currently use version 2003. What i'm trying to achieve is that i'm dealing
with a disciplinary action at work and i'm trying to determine whether a
member of my staff switched on her 'out of office' the day before she called
in Sick.

Alternatively do you know where 'out of office' replies that are sent out
are stored.

Open to any suggestions/help that you can provide.

They are not stored and since these messages are being send at Exchange
level Outlook cannot keep a log even if it wanted ;-) You can however check
your Exchange/SMTP log.
