When composing a message in Outlook, the right click does not allow me to
hyperlink. I can only hyperlink from the menu bar. Also, that offers me a
http link only. I have re-installed Office, and that works for a while, but
when updates are installed, or for other reasons, it reverts.

Use Word as your e-mail editor instead.
