In customize current view, click on Group/Clear all/OK. Then click on
Filter/More Options/Categories, and select the category you want to filter
for. Click OK/OK.

Sorting by categories is not possible, and it never was. If you want to have
the view sorted by categories then you must group by categories and sort
that.
Please consider what grouping by categories means: It groups your *items* by
categories, not the categories theirself. That means if an item contains two
categories then that *item* is displayed in both categories, even if you set
a filter for having just one of it displayed. Whereas, if another item just
contains the one category that you fade out by a filter then that item is
not displayed.
