When using the Reading Pane, an HTML message shows with a line that stretches
'way out and I have to scroll horizontally to read it.

In my options, I do have the box for plain text checked to wrap at 76
characters, but that does not help with the current message I'm reading.

HTML wraps automatically in the Reading Pane based on the width that is
available unless the HTML formatting of the message tells otherwise (like
for instance with newsletters).
The Plain Text option does not apply to HTML formatted messages.
You can of course opt to read all messages in Plain Text.
