Outlook follows you default configuration of Windows. How to change it
depends on your version of Windows.
Windows XP and previous;
Control Panel-> Folder Options-> tab File Types

Windows Vista and Windows 7
Start-> Default Programs-> Associate a file type or protocol with a program

You shouldn't need to change anything. Installing Adobe Reader should change
the file associations properly.
