Non-Organizer Updating Meeting Details

I would like one of the attendees to update meeting
information.

As an organizer, you can do this by sending an update.
The only thing a requested attendee can do is propose a
new time.

Is there a way for an attendee to update meeting
information. Or, is there a way for an attendee to take
ownership of an appointment?

Only if they are a delegate with the appropriate permissions of the meeting
organizer.
