Does anyone know how or if you can strike through an appointment instead
of deleting it?

No, its not possible to strike through appointments. You can use color
categories to "mark" them.

We do have things color coded, but usually we would strike them out if
they have been cancelled so we could at least leave them on the calendar.
Would you suggest any other option? Thanks

At this time, no. I'm not aware of any addins that would allow you to
strike out appointments.
