Create a monitor, select performance --> simple treshold --> type the name
for the monitor and select the target you want --> on the performance click
select, select the Process counter, select the % Processor Time, select the
process you want (that is the service process), select the interval want to
monitor the process --> input the treshold you want --> configure the alerts
and you are done.

Counter is --> PrivateBytes
But if you are using Opsmgr 2007 R2 you can use the process monitor template.
Just follow the wizard and almost at the end you can input the memory
theshold.

yes i have scom 2007 r2 but in the wizard the maximum of memory usage is
100MB and my services starts with over 100MB so i can't use the wizzard and
an override is also without effect.

Then use the PrivateBytes Counter
