How do I rotate my text? It's in vertical mode...

What version of OneNote are you using? What do you mean "vertical mode"?
You wrote the text from top to bottom? Are you trying to rotate the entire
screen or just a block of text?

I inserted a pdf document into onenote and it was rotated 45 degrees to the
left. Hitting the rotate button doesn't undo it. I'm wondering why it
pasted/inserted that way to begin with, and how I can prevent that from
happening.

It is a 2007? version of onenote.

You need the image rotator powertoy free at
http://blogs.msdn.com/johnguin/archive/2007/12/14/image-rotator-powertoy-for-onenote-2007.aspx.

It lets you rotate printouts or any image in OneNote.

Obviously it's not "45 degrees" <bg>.
Could be 90 or so <g>.

For "rotating" pls use the "Image Rotator" Powertoy:
