How do you set up the sequence of a bulleted list, ie-big
circle, little circle, etc.

Do you mean to always apply the same bullet symbol when

You can't do that as you create the outline.

The best you can do is to create your outline with normal
bullets (i.e. the same one on each level) and then use
the Bullets Task Pane to apply a different bullet symbol
to each level after the fact by selecting the entire
outline and then using the "change Bullets on:" drop down
box.
