I'm trying to implement a Mailmerge function server-side using OOXML.
I'm struggling to find any resources that can point me in the right
direction.

If a pay-for library will do, you could check out
http://www.aspose.com/categories/.net-components/aspose.words-for-.net/default.aspx
(I've never used it)
