For Office 97 the information on the splash screen is encoded into the apps and you will
need to uninstall/restart/install. In Office 2000 the user name can be changed from
Tools=>Options=>User Info.

I understand MS Office 2000 can be changed in the registry. Just crank up
REGEDIT and do a search for the last name of the user and you should find the
key which holds that information (there may be more than one) and update it.
As for Office 97 and earlier, you have two choices;
1) reinstall the software (the name is embedded in the program in an
encrypted form);
2) hang out (or do a Deja search) in the cracks groups and see if someone has
developed a crack to change it.
And I think those are about your only options!
