How do I change the toolbar icons on the shortcut bar??

If I add new toolbars to the office shortcut bar, they all have a
blank default icon. Any idea where you can set this icon?
Obviously when you add _buttons_ to the toolbar, each one picks up its
icon from the program concerned, but I can't see where to set the
actual toolbar icon.
