Open MapPoint and select Help/About Microsoft MapPoint. You will see that
the mapping information comes from NAVTEQ and Tele Atlas; Applied Geographic
Systems (for the NA product, Europe may be different).

More details than that would have to come from inside Microsoft, and may not
be publically available.
