On Word's Edit menu, click Replace.
When the dialog box opens, click More.
Be sure the cursor is in the Find pane (it should be by default), go down to
the Format popup menu and choose Font.
Select Palatino and click OK.
Now click into the Replace pane, go down to the Format popup menu again and
choose Font.
Select Helvetica and click OK.
Finally, click Replace All.
(Do not type anything in either the Find or Replace pane, by the way.)

Use Format>Style and change the font in the style you are using. That
changes the font in that style for the entire document.
It will not affect Symbol fields.
