How would I change the pitch of my document from, say, 10-pitch to 12-pitch?

"Pitch" - characters per inch - isn't a valid specification when dealing
with proportionately spaced (scalable) fonts, which are the most commonly
used on Macs & PCs. The number of cpi & characters per line will vary
depending on what characters are typed & the font size used.

The spec pertains only to Fixed Width (monospaced characters) fonts - those
such as you'd find on a typewriter where character spacing doesn't vary.
There are Fixed Width font available if you really need to use them, but in
general they are not desirable for contemporary documents because the text
is more difficult to read. Some commonly available are Andale Mono,
Consolas, Courier & Monaco but you'll have to do some research to determine
their actual pitch (which isn't the same as Font Size).
