How did you change it as the default?? Wa sit through the Normal
tempplate??
You might also want to check the styles you are using witht he text. UK
English might be associated to some of them. That would explain why your
setting "reverts" by itself,

I had exactly the same problem and went through the same process with
no success until I discovered that each style has a Language option
and this is where it needs to be changed otherwise it reverts to
English US all the time.
My non-expert solution is to click
Format>Style>Modify>Format>Language.
I chose all the base styles like Normal, Body text, Heading 1 etc
from which most others are formatted and make sure that they all are
formatted with English UK and voilà it solved my problem.
Whenever I find one style acting like English US, it is because I did
not modify it yet. I check to see which style it is based on and start
by modifying the base style and it works. if it is not based on any
style then I just modify the language on this particular style.

Of course, if you have changed the inheritance chaining, you are probably a
documentation professional who has done so for a very good reason and you
don't need to be told this :-)

Oh but I am not a not non US English speaking person!
I just tricked you because I can quote menu items verbatim without
barfing up. e.g "Customize" when every neuron in my spinal column wants
to write "Customise".
You notice just to throw you off I use the British, Aussie style of
spelling realize (realise)? :-) I never understood that when you
pronounce it with either the American accent or Brit accent its still
pronounced with the "z" sound. ;-)

If you want help, please POST A NEW QUESTION, describing what you have
done and what happens, being sure to state version numbers.
This is a straightforward set of settings you have to make. There has to
"be" a default, and US English is understandably the one they picked.
But you can change it easily, by carefully following the instructions Daiya
sent you to.
After all, as you can imagine, I am rather keen on English AUS down here in
Australia :-)
Do it all, do it carefully, and do it right; and it will stay set forever.
