That is usually an option on the Printer dialog. I believe it's
provided by the printer drivers.

Open Document and select entire Document:
then:
Format menu > Fonts
Click More Colors as show here:

Choose Black.
Click Okay, then Okay again to get out of all menus
All font colors should turn to Black
If you want to save the document under another Name.
not make sure when you save document that you do not save changes in in
"normal" (template used to start all documents when you use word.)
To ensure the ability go to Word Preferences

and make sure the item I have highlighted with the arrow is check before
quitting without saving document, or saving document and quitting.
When you dismiss the document after saying it should ask you if you wish
to save changes in normal choose "no".
I've checked in my printer and there is no way to set to print B&W only.
The only other way is to scan document save as a *jpeg* image Then use
"Graphic Converter to convert to B&W or Gray scale then Print it out.
