Things to do (in this order)
Install this update:
http://www.microsoft.com/mac/DOWNLOAD/OFFICEX/OfficeX_1012.asp
Run Jaguar's Disk Utility and repair permissions.
If these steps don't fix the problem, try (with all office applications
turned completely off) deleting Excel's preferences. Empty the trash before
starting Excel.

Create a column graph with Data1 and Data2 as series (= rows, with ABC
on X axis). Double-clic the Data1 series in the graph and select the
three cells with values from "Errordata1" as your costum Y error bar.
For me and this other user, Excel almost always crashes. If it does
not crash for you, please try it again a few times (mine too works
sometimes).
