is there a way to ask for a delivered and a read recipt with entourage?

This is FAQ 130 on the Entourage Help Page:

€ Go to Tools -> Accounts.
€ Under the Mail tab, edit the mail account you want to send from.
€ Click the Options tab. (Note to Exchange Server users: Click the
Mail tab, not Options tab)
€ Under "Additional Headers", add in a new header:
Disposition-Notification-To
€ Under Value, type your e-mail address.

Note that this will only request a return receipt. While some clients can
and will carry out the request, others will prompt the user and they can
choose not to send it back, and still other clients like Entourage ignore
the request completely, so it should not be assumed that no receipt means a
recipient didnąt receive the message.
