Move only part of old Entourage to new Outlook?

Hi,
I've had Entourage for years, and the database is gargantuan-huge (8.8 GB). Two years ago, my wife took over my old Mac -- and just took over the existing Entourage (and my existing database). AT the time, we weren't thinking we should "start over" for her.
Now she has a new Mac, and a new copy of Office 2011 and wants to migrate all her folders and mail from the last 2 years over to the new Outlook. I'm sure there's a way to do this -- just create a separate, smaller database with only her mail account before we export/import to Outlook?
Can somebody help?
