Setting up the default language character encoding for outgoing mail?

I have configured OE 5.0.2 for using ISO-8859-7 (Greek) as the default
character encoding for outgoing mail. However when I create a new mail, or
reply to one, OE switches the encoding to Automatic. The work-around is that
every time,I have to remember to switch the encoding back to Greek manually,
prior sending every mail (this is not very practical, as I often forget to
do it). Is there a work-around?...
