Non Admin User Error on People field

Hi - I am new to Infopath.. I built a form that has a people picker on it. I have to say that I don't get the whole concept of deploying to a sharepoint site.
The field is named "AssignedTo" and gets manually updated by one of the users in the admin group (with full rights)
If a non admin creates a form and submits it to share point, then, an admin updates my AssignedTo field. The non admin users can no longer submit the form to sharepoint without getting an error on this field saying it cannot find a matching value.
I am hoping someone can help me understand what is happening so I can fix it. This field is read only on the form for non admin users...
