In IIS 6, when creating a new application pool, we had the option of "use
existing application pool as template". How can I do this with IIS 7, I
want to copy a pool where I've changed the properties from the default.

I have not found a "copy" in IIS 7 management but I suppose you could do it in VB. Go to Actions -> Set Application Pool Defaults... and change the values there. Any new Application Pool you create will inherit those values
