I have three Exchange 2003 servers in our organization. Two of those
Exchange servers have mailbox and public stores, the third one has none
(other than default).
We backup the exchange servers DISK-to-DISK.
The Question:
If the first two exchange server (ones with stores)crash and burn, can I
restore these stores from DISK-to-DISK backups, on the third Exchange
Server?
Please advise, or direct me to online resources that'll help me.

This is the method commonly deployed by third party Exchange DR
solutions. It works pretty well and actually facilitates easier DR
testing as you can do a restore and only re-home a single test user
without having to do the whole disaster recovery install of Exchange.
There is no harm in trying this solution and seeing how well it works
out for you.
