I have one server setup as the AD, a second server
connecting to that domain controller running Exchange2k,
and now want to add a third server as a child domain and
connect using the exchange server for mail. I add a user
on the child domain server and when it asks to setup the
mailbox, the mailbox store field is blank. I must be
missing a step to make this happen. Any help is
appreciated.

Do you have a Recipient Update Service configured from the Exchange server
to the child domain?

Run "setup /domainprep" from your E2K CD setup dierctory (or a network
drive...) in your child domain to configure all necessary objects and
services. Basically this will create the Recipient Update service for
this domain and the Exchange Domain Servers & Exchange Enterprise
Servers groups (both empty, don't worry) in this domain.

Also read this article

your organization.
