I keep getting error 1295 after I restore the information store database
files, priv.edb and pub.edb. The only documentation I've found on it says I
should be sure the organization and site names are the same as the sever
before it crashed, I did this and it still doesn't work.

Is that an ERROR CODE or is it an EventID? I can't find a thing about
it. If it were a 1278 error then I'd agree with what you say is the
reason (incorrect Org/Site/Server names).
