I know that the email we recieved come from a SMTP-server there act
like a relay. Maybe there also are antispam servers before the Exchange
server.

We are experiencing the same problem. Just one day (feb 4th this year) our
system (sbs2003-echange sp2) changes the html body to a attachment.
When looking at the headers of both mails (good and bad) we see that in the
bad one the "content type=text/html" is gone.
Sending this wrong email to a different host, like gmail, the body is
correct. Sending a different html email to this server the body is correct.
We have tested this also without our spamcheck (spamasassin) and
antiviruscheck (clamv), both on a different host. Same result.
IMHO exchange 2003 can't cope with the missing content type line, but i
don't know here or how ist been removed...
Thanks for reading, an awnser would be nice.. :-)
